The winery was realized through a collaboration with the engineering office Pupo of Orvieto(TR), with whom, together with the buyer Dr. Cotarella, we agreed and carried out the project.
The particularity of the supplying consisted in constructing equipments made to measure, following the most modern technologies.
Starting from the hopper for the reception of grapes, lifted out of the ground by means of a trellis-work of suspension, totally made in stainless steel to support a load of approximately 25 ton. and equipped with a twin-screw, planned to avoid damages to grapes, we proceeded with manufacturing pneumatic presses, suitable to work the grapes in inert atmosphere, and to select outgoing musts in perfect automatism.
The supplying included also a cryomacerator able to allow the aromatic extraction of grapes, functioning uninterruptedly and allowing a working potentiality of 20 ton/h, with a reduction of temperature up to 20°C in comparison with that in entrance. Such a particular system exploited, therefore, whether the advantages of lowering temperature, or them of macerating grapes in a controlled atmosphere.
The system was greatly fitted with accessories and personalized details in order to realize a great complex that guaranteed the better quality in absolute.
